@JamieM Very nice. That is really sharp. Are you free handing or is that on a jig. What stones are you using?

I use my TSPROF Kadet Pro Sharpener with diamond-bonded stones. I cannot tell you how amazing diamond-bonded stones are; they are incredible. I do sometimes refresh my knives freehand on my Japanese natural stones.
