We tried goose a couple of years ago and were thoroughly underwhelmed. Fortunately, we had turkey and gammon too!
This year, will be a small turkey joint, a small beef joint and a nice lump of gammon. Maybe we'l try thinly sliced spouts stir fried with streaky bacon again as it was lush that last time we had them. Obviously lots of home made roast potatoes too!

Turkey breast stuffed with Brie and Cranberry wrapped in Parma ham and roasted. Gravy, Sprouts, Red Cabbage, mashed Potato. Gorgeous.
That sounds beautiful Wayne.
Right up my street. :)
I must put my chef head on and give it a go for Christmas day as I always cook the dinner.

We have something in common there then mate. I too always cook Christmas dinner and give the Wife a day with her feet up she deserves it. I cooked this last Christmas as there was only me and her at home. The kids have moved out now so it's just us and one Turkey breast does us with plenty left over for sandwiches. :) It's a nice dinner. Easy too. If you try it I hope you enjoy it as much as us.....By the way Mozzarella cheese is just as nice and milder, I do that with Chicken, spinach and nutmeg.

Has to , be a Bronze Turkey with legs, I do like the dark meat + Roast Potatoes, carrots , peas, brussels etc +
trimmings - stuffing with chesnut, bread sauce, cranberry. No wonder I do not move much after that.

Can't beat a proper roast turkey, crispy roasted Maris Piper spuds, stuffing, pigs in blankets, carrots, parsnips, sprouts, Yorkshire pudding, peas and lashings of gravy. Make sure you do more than enough, as you then mash the remainder together for breakfast the next day. I do love bubble n squeak.
